If you’re a long time reader here, you know I love easy recipes. I cannot fill my weekly meal plan with dinners that have long lists of ingredients. I just can’t. I don’t have the time in my evening to spend two hours cooking.
We are a family who loves macaroni and cheese. My kids could eat it every day for lunch, if I let them.
Now that we have this stock pile of grass fed beef, I am always on the hunt for new recipes that spotlight this tasty ingredient. Homemade Beef Macaroni and Cheese seemed like a total score.
And I was right, my family loved this. Here is how we made it, and it’s perfect for a busy weeknight.
Ingredients:
- 1 lb of beef (we used grass fed)
- 1 T olive oil
- 1 clove garlic
- 16 oz pkg elbow macaroni, cooked and drained
- 4 T flour
- 3 c milk
- 2-3 c, sharp cheddar cheese, shredded
- salt and pepper to taste (1 tsp salt and 1/4 tsp pepper)
In a skillet over medium heat, brown the beef in the olive oil and garlic.
Once done, remove from the pan and add it to the bowl of cooked, drained pasta that you’ve set aside.
Leave the tidbits of beef and any oil in the pan.
Use a whisk to combine 1 c of milk and the flour in a small bowl.
Whisk well to remove any clumps.
Pour it into the skillet, again over medium heat.
Add the salt and pepper.
Use the whisk to stir it pretty constant until it starts to thicken.
As it starts to thicken, slowly add the rest of the milk continuing to whisk.
It will continue to thicken back up a bit as it continues to heat.
Add the cheese, whisking to combine.
I did 3 cups of cheese because we love it. You can just do 2 cups if you want.
You will now have a very cheesey sauce.
Pour the cheese sauce over the beef and noodles you’ve set aside.
Mix the cheese sauce, beef and noodles together until everything is well coated.
Now you’re ready to serve it.
Super easy.
