Cheesy Chicken Pasta

This Cheesy Chicken Pasta is one that your family will devour. I am serious. And it is super easy to make.

I have been serving this up for probably five years. Maybe a little longer. When I share weekly meal plans it is listed often, yet for some reason I’ve never shared it with you guys.

Prepare yourself to find your family’s new go to dinner. Make it tonight! And add it to your meal plan rotation and list of Chicken Recipes!

Ingredients:

  • 1 (16 oz) package of penne pasta
  • 1 clove garlic, minced (or a spoonful of the jarred stuff)
  • 2 T olive oil
  • 4-6 chicken breasts, cut into chunks
  • 1  1/4 c chunky salsa (I use mild because two of my kids and my husband prefer less heat)
  • 1 c frozen corn kernels (honestly I toss in the entire bag to help stretch out the meal)
  • 1 bell pepper, diced (I use a red bell pepper)
  • 2 c shredded cheddar cheese (or your favorite blend)

Fill a large pot with water and turn the heat to high. You want to bring this water to a boil for cooking your pasta.

While you’re waiting for that to boil over a medium heat, add the olive oil and garlic to a skillet.

Toss in your chicken.

Cook over medium heat, stirring as needed, until thoroughly cooked.

Next, toss in the salsa, corn and bell pepper.

By this time your water should be boiling. Add the pasta to the boiling water and let it boil for 9 minutes.

While the pasta is cooking, continue to stir the chicken, corn, salsa, pepper mixture ensuring that all of the ingredients are blending together.

One the pasta is al dente or cooked to your liking (for me this is 9 minutes) drain the water.

Return the pot to the stove with the pasta in it. Pour the chicken mixture from the skillet into the pasta pot. Stir well.

Sprinkle with the cheese.

Combine everything well.

And there you have it. A super easy dinner that is full of flavor. We absolutely love this meal.

Each time I make it my husband asks why I do not make it more often.

We usually serve this with a salad and sometimes baked bread or rolls.

Yield: 10 servings

This cheesy chicken pasta is amazing and perfect for dinner tonight!

Ingredients

  • 1 (16 oz) package of penne pasta
  • 1 clove garlic, minced (or a spoonful of the jarred stuff)
  • 2 T olive oil
  • 4-6 chicken breasts, cut into chunks
  • 1 1/4 c chunky salsa
  • 1 c frozen corn kernels
  • 1 bell pepper, diced
  • 2 c shredded cheddar cheese

Instructions

  1. In a large pot on the stove top boil the water according to the pasta package directions.
  2. While waiting for the water to boil, heat the olive oil in a separate skillet over medium heat.
  3. Add in the chicken and garlic to the skillet. Cook until chicken is completely cooked through.
  4. Add the salsa, bell pepper, and corn to the skillet. Stir to combine.
  5. If water is boiling cook until pasta is al dente. Approximately 9 to 10 minutes.
  6. Continue to simmer the chicken salsa mixture.
  7. Once the pasta is done drain and add back to the pot. Pour in the chicken salsa mixture. Stir until combined and top with cheese.

  4. I’m a big fan of easy weeknight recipes and this is no exception. What I love most about it though your use of salsa as an alternative to the typical tomato sauce. Adding that bit of a kick makes this pasta so appealing to me. I’ve added it to my menu for next week! Can’t wait to try 🙂
