Did you know you can make delicious ice cream at home without an ice cream machine?

Have you ever made homemade ice cream and add in some delicious fixings? What about adding in cake pieces?

We made homemade ice cream last night using an easy recipe I found online for copycat Sweet Cream from Cold Stone.

Then, we made red velvet cupcakes with cream cheese icing and mixed it in to the ice cream.

I was inspired by this tempting and indulgent new room freshner from Renuzit that smells just like red velvet cake. Yum!

And that chocolate covered cherry scent smells amazing too! This new collection has just hit the shelves of your local Walmart and Safeway store.

Ingredients:

Sweet Cream Ice Cream

  • 1/2 c granulated sugar
  • 2 T cornstarch
  • 2 c heavy cream
  • 1 c whole milk
  • 1/4 c light corn syrup

Red Velvet Cake

  • 1 boxed cake mix with ingredients listed on box
  • 1 container cream cheese icing

In a medium saucepan, add your sugar cornstarch.

Mix in the milk, heavy cream and corn syrup.

Whisk well and heat over a medium heat.

Stir constantly until you reach a slow boil.

Let slow boil for 30 seconds.

Pour the mixture into a freezer safe container.

Pop it in the fridge for about an hour until well chilled.

Then move to the freezer. I kept mine in the freezer over night.

This is what the ice cream looks like when done and solid.

Oh my goodness gracious this is sinful!

Get your favorite red velvet cake mix and prepare it as the box directs.

I made mine into cupcakes, as you only need a few for the ice cream. Then, the rest of the cupcakes can be enjoyed later.

Once cool, ice the cupcakes with a cream cheese icing.I just used the good ol’ store bought stuff.

Remove a few of the cupcakes from the liners and use a fork to smoosh them up. Mix the icing into the cupcake really well.

I smooshed about 4 cupcakes.

Lay out a piece of parchment paper or wax paper on the table or counter

Place a few scoops of the ice cream on the paper.

Flaten it out a little with the back of the ice cream scooper.

Put a couple of scoops of the red velvet cake mixture onto the ice cream.

Use the scooper to smoosh it into the ice cream and mix it in.

Transfer the ice cream into a bowl and serve.

Is this incredibly beautiful, or what? And, it makes every day sweeter!

This is super smooth and not overly rich like you would think. It hits the spot on a 100 degree day that is for sure!

    1. I knew you could make ice cream in a ziplock bag like as a Science experiment, but I had no idea you could make gourmet ice cream like this.

      It really was very, very simple. Matthew and Nicky looked on and help where they could. It was so much easier than I ever imaged.

      We’ll defiantly be making ice cream at home again. My kids (and husband) were amazed that we REALLY made ice cream.

    I do not like Red Velvet Cake BUT if you made this for me I would eat it. Oh my it really looks great. My birthday is Saturday…wanna make it for me? haha
