How to Stretch a Meal

I love simple recipes as much as the next gal. Afterall, I have tons of easy recipes here on my site.

And Pocket Change Gourmet’s Chicken Noodle Bake was on my meal plan last week. Super easy recipe with just 3 ingredients.

You know me, I make my meal plan, then make my grocery list and then head to the store. I never ever mess up.

Never.

So I made it home thinking I had a full bag of egg noodles in the pantry and to my surprise the bag was only half full.

{ugh!}

Maybe little creative Nicky did some noddle art last week while I was not looking? Who knows.

My point is, I realized at the very last minute I was going to have to stretch this meal.

So you know what I did?

I added a cup of shredded mozzarella (because that is what was in the fridge) and a bag of mixed veggies to the casserole dish before I tossed it in the oven.

My kids cleaned their plates.

‘Mom, this is soooooooooooooo good!’

It is really interesting how veggies seem less vegetabley when they are in a casserole all mixed up.

Some of my children even had seconds.

This is a recipe additive I highly recommend and certainly a mommy solution. Steamed veggies and cheese can do magic!
