One Pot Chicken Spaghetti

I think when you have a houseful of kids, you never stop trying to create easy dinner recipes. It is just the way your brain works.

There is no doubt in my mind that one pot dinners are the answer. This recipe is almost too simple. That said, it is packed with flavor.

Let me show you how easy this is to make.  And how easy it is to also add in some additional veggies, which your kids will never notice.

Ingredients:

  • 4 raw chicken breasts
  • 1 medium onion, chopped
  • 1 T olive oil
  • 2 cloves garlic, minced
  • 16 oz pkg penne pasta, uncooked
  • 32 oz container chicken broth
  • 1 medium zucchini, grated
  • 1 (23 oz) jar Homestyle Ragu Thick and Hearty Traditional spaghetti sauce
  • 1 tsp Italian seasoning
  • 1/2 c fresh Parmesan cheese, grated

Method:

In a large pot add your olive oil, garlic and onion. Cook over medium heat until the onions are translucent.

Add the chicken breasts. Cook on each side over medium heat until no longer pink in the middle. Remove the chicken from the pot and dice it up. Add it back to the pot.

Add in the chicken broth, jar of spaghetti sauce, pasta, grated zucchini and Italian seasoning. Stir until well combine.

Move heat to high and bring to a boil. Once boiling reduce heat to simmer and put a lid on it. Simmer for 20 minutes.

After 20 minutes remove the lid and stir. The liquid will be reduced and the noodles will be tender.

Plate it up and top each plate with grated Parmesan.

We had buttered bread with it.
