One Pot Pasta Dinner
This recipe is going to change the way you cook dinner at your house on a busy weeknight. No doubt in my mind! Promise.
You know I am all about the easy recipes. This one… it’s a game changer.
Yes, a game changer! I am about to spoil you. And your family.
Ingredients:

- 1 lb penne pasta (We used Barilla® Pronto™ which we found at Kroger)
- 12 oz (give or take) of chicken sausage, cut into rounds
- 3 cloves of garlic, minced
- 1 medium onion, diced
- 3 medium sized, fresh tomatoes, diced
- 2 c fresh basil, roughly chopped
- 2 fresh squash, cut into rounds
- 32 oz chicken broth
- 1/2 c water
- kosher salt and fresh cracked pepper, to taste
- 1 cup shredded Parmesan cheese
Are you ready for how easy this is?
In a large pan or pot, add the chicken broth and water.
Toss in the garlic, onion, tomatoes, squash, pasta, basil and sausage.
Add some salt and a few cracks of pepper.
Don’t want sausage? Add some shredded rotisserie chicken.
Don’t want meat, that is fine too.
Want more veggies? Go for it!
Stir is up and put it on a burner over high and bring to a boil.
Once it boils move it to simmer. Let it simmer for 8-10 minutes uncovered.
Seriously, that is it.
When the water is gone, stir and dinner is almost ready to be served.
Top with the cheese.
Add more if you want.
I promise you, deciding if you want more cheese is the hardest part of this recipe!
Stir to melt the cheese. The pasta is “al dente” perfection!
We served this with warm buttered bread.
