One Pot Pasta Chicken Alfredo with Veggies

One of my friends who is a fellow blogger has an awesome one pot cajun chicken pasta recipe on her site. It looked amazing, but I knew my kids likely would not go for the cajun flavor. And, I had a lot of veggies in my fridge that I needed to use up. I knew this was a recipe I could convert for my family.

Let me show you how easy this is to make! Now, I made this for my large family. You could divide this recipe in half for a family of 4.

Ingredients:

  • 6 chicken breasts
  • 4 T butter
  • 2 (16 oz) packages of fettuccine noodles, uncooked
  • 2-3 garlic cloves, I use the jarred stuff
  • 4 c milk
  • 6 c chicken breasts
  • 1 c Parmesan cheese
  • 6 oz feta
  • 1 bell pepper, sliced into strips
  • 1 head of broccoli, cut into small pieces
  • 2 c fresh spinach
  • salt and pepper to taste

In a large cooking pot, I used a cast iron dutch oven like this one, over a medium heat melt the butter.

Add the garlic and cook for about 2 minutes.

Add the milk, chicken broth and noodles. I moved the heat up to medium high so it would boil.

Stir here and there because you do not want your noodles to stick together.

When the milk has boiled about half way down, I added my veggies.

Continue to cook until the noodles are tender all the way through and the milk mixture has almost all cooked away.

Add your cheese and stir, stir, stir.

All of the noodles should be coated evenly with your milky cheese sauce.

Salt and pepper to taste.

Plate it up!

I served this with garlic bread. Super easy dinner. You could even make a delicious side salad.
