You’re going to pass out at how amazing these are.
Ok, maybe not pass out, but if you love peaches or ice cream or honey or butter or mint… this recipe is a keeper for sure!
Easy dessert recipes are always welcome here at my house. If you have some peaches in the crisper drawer, grab them (and just three more ingredients… plus ice cream if you desire).
We’ve had peaches delivered in our last few produce boxes. My husband and I fight over them. They are delish.
My sister-in-law Alex, yap you’ve seen her writing here on Crystal & Co., spent the day with me helping me create a couple of recipes. This was one of them. We are the fancy-smancy recipe development team here on the ol’ blog. Along with a houseful of rugrat boys who admire our creations and run off with the ice cream and candy sprinkles.
This recipe makes enough for four servings. Adjust accordingly for your family size.
Ingredients:
- 2 peaches, cleaned and cut in half
- 4 T butter, separated in 1 T portions
- 8 T local honey, divided in half
- 1 c of vanilla bean ice cream divided into fourths
- 4 sprigs of mint
Slice the peaches in half and remove the pits.
Place them in a casserole dish as shown below.
Add 1 T of butter to each peach.
Next drizzle 1 T of honey over each peach.
Pop these in a 350 ° oven until bubble brown and soft. Mine cooked for about 45 minutes. Honestly, you could do this in the slow cooker (like this casserole style Crockpot) if you do not want to heat up your house.
Once they are done place one peach half on a plate.
Add a scoop of your favorite vanilla ice cream.
Drizzle 1 more tablespoon of honey over the ice cream and peach.
Top with a sprig of mint.
Repeat for the other three peach halves and you have a delicious dessert for four.
