Pumpkin Spice No Bake Cookies

Indulge in the perfect blend of pumpkin spice and creamy peanut butter with these mouthwatering Pumpkin Spice No Bake Cookies. Whip up a batch in no time with this easy recipe!

Ingredients

  • 1/2 Cup Pure Pumpkin
  • 1/3 Cup Peanut Butter (smooth or chunky)
  • 1/2 Cup Butter
  • 1/4 Cup Milk
  • 1/2 Cup White Sugar
  • 1 1/2 Teaspoon Vanilla
  • 4 Cups Quick Oats
  • 1 Teaspoon Pumpkin Pie Spice
  • 1/2 Teaspoon Cinnamon
  • 1/8 Teaspoon Salt
  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Unsweetened Coconut, plus extra to garnish
  • Melted Chocolate for Drizzle (I used 1/2 cup)

Instructions

    1. In a saucepan, combine pumpkin, peanut butter, butter, milk, and sugar.
    2. Bring to a boil over medium heat and stir continually (do not try to rush this process). 
    3. Once the mixture is boiling, reduce heat to low and simmer for 5 minutes (do not over cook).
    4. Remove mixture from heat and allow to cool for 5 minutes. 
    5. Stir in vanilla. 
    6. Add quick oats, pumpkin pie spice, cinnamon, salt, pecans, and coconut - mix well. 
    7. Line a baking sheet with parchment paper and use a 1/4 measuring cup or cookie scoop to scoop about 1 1/2 - 2” cookies onto the baking sheet and garnish with coconut (optional).
    8. Allow to cool completely. 
    9. Once cool, melt chocolate in the microwave in 20-30 second increments until melted. Drizzle over cookies and enjoy!
