Epically Fun Rainbow OREO Cookies

I made these epically fun (and easy) rainbow OREO cookies the other day and now I’m feeling the need to make a whole rainbow party just so I can make more of these awesome chocolate covered OREO cookies!

Seriously, making fun rainbow recipes is so much easier than you might think. I make this layered rainbow cake years ago and it is out of this world fun. It’s so much easier to make than you’d expect.

Plus, making rainbow food just makes my kiddos smile and there’s something about having a fun cookie for a party, be it Easter or St. Patrick’s Day or a birthday that just seems brighter when they’re excited.

Who doesn’t want a rainbow OREO cookies in their life on any day?! LOL!

And this is such a simple recipe. They’re just a plain layer of chocolate around an OREO cookie…no red food coloring, no baking pans, no almond extract.

Just a handful of ingredients and you’re to go!

So, grab your melting chocolate and let’s get to making some rainbow cookies!

Ingredients for Making Rainbow OREO Cookies

  • 2 cups Wilton white candy melts
  • Miniature M&M’s
  • Large and small white nonpareil sprinkles
  • 12 OREO Cookies

How to Make Dipped Rainbow Cookies using Oreos

Place a piece of parchment paper on your counter. This is really just for making a non-stick surface. You can also use a baking sheet covered in parchment paper or whatever.

Heat the white candy melts per the package directions until melted. Don’t overheat though. Bad news when that happens.

Dip an OREO cookie into the melted white chocolate, taking care to make sure all sides are covered, then remove the cookie from the chocolate with a fork and gently shake off any excess chocolate.

Place the cookie on the parchment paper.

Place M&M’s into a rainbow shape along one side of each chocolate covered OREO.

Carefully place white sprinkles on the end of each side of the rainbow, then allow the chocolate to harden for a few hours or overnight and enjoy!

Tips to Make White Chocolate Covered OREO Cookies

  • To help the chocolate set faster than it would if you just left it on the counter, you can pop your rainbow cookies in the fridge for 15-20 minutes.
  • If you want to make your chocolate covered OREO cookies a few days before eating, you can store them on the counter at room temperature in an airtight container for 2 weeks before they get a little mushy.
  • I love using Wilton’s melting chocolate wafers, because they have a consistent melting point and are always super creamy. But you can use regular chocolate, too, just be aware it might not be exactly the same as mine.
  • If your melted chocolate seems a little too thick, it can easily be thinned by adding a tablespoon of oil, butter, or shortening. Stir that together and you should be good to go.
  • To put your mini M&Ms and sprinkles on, a trick I tried out that really worked was using tweezers. I know that sounds insane. But it worked better than dropping them on–and getting chocolate on my fingers. LOL!
