Ingredients Needed for this Recipe

Here’s what you need for this easy weeknight meal!

  • Mini Bell PeppersMini Bell Peppers are the perfect vehicle for a great taco-stuffed peppers recipe. Not only do they carry the beautiful, slightly sweet taste of regular bell peppers, but their size makes them ideal for bite-sized treats! When stuff with a flavorful combination of ground beef, garlic, onion, tomatoes and spices, these mini peppers transform into little bites of taco flavor heaven.
  • Ground BeefIf you are making a taco stuffed peppers recipe, you definitely want to use ground beef that is high quality and flavorful. Look for ground beef with more fat content, as the added fat will offer great flavor and moistness — nothing worse than dry stuffed peppers. Additionally, opting for organic ground beef is a great choice, as it is not only healthier, but often more flavorful too.
  • OnionOnions are great for adding flavor and texture to Taco Stuffed Peppers. They have an inherent sweetness that really accents the tanginess of the peppers, while providing a bit of punchy onion taste.
  • Diced Tomatoes with Green ChilisDiced tomatoes with green chilies add a kick of flavor that makes taco stuffed peppers really stand out. They provide subtle heat, plus the acidity and sweetness that tomatoes bring to any dish. The diced tomatoes absorb all the delicious flavors of whatever you choose to stuff your peppers with like ground beef or shredded chicken.
  • Taco SeasoningIf you’re trying to make your taco stuffed peppers really pop, then it’s all in the taco seasoning. A nice blend of cumin, garlic powder and chili powder should do the trick. No matter what you choose, just remember – when making stuffed peppers with tacos, don’t skimp on taco seasoning!
  • Cream CheeseCream cheese adds an irresistibly creamy and savory element to taco stuffed peppers that can’t be replicated by other ingredients. Plus, it helps bind the stuffing together so you get all of those delicious flavors and textures in each bite. Those same flavors – with a balanced blend of spicy, smoky, and zesty – get enhanced through the creaminess that cream cheese provides.
  • Refried BeansTaco stuffed peppers are a classic savory dish that is enjoyed by so many, and adding refried beans can depth of flavor and texture to take this dish to the next level. Refried beans are cooked until soft and combined with spices like cumin and chili powder for a zesty kick, making them the perfect filling for taco stuffed peppers.
  • Shredded Mexican CheeseShredded Mexican cheese elevates taco stuffed peppers from a simple side dish to an amazing main course. It infuses the dish with rich, creamy flavor that isn’t too overpowering. And let’s be honest – having the cheese already shredded makes the prep work easier!

Should Peppers Be Precooked Before Stuffing?

Precooking peppers before stuffing is a smart idea that many people often overlook. Not only does precooking eliminate the risk of undercooked food and potential food poisoning, but it also helps peppers maintain their shape and texture and ensures that their flavor is perfectly balanced with other ingredients in the stuffing.

Precooking also prevents peppers from soaking up too much moisture, which can affect how evenly your dish cooks. Best of all, it takes just minutes to precook your peppers – once you do, assembling a flavorful and juicy stuffed pepper dish should be easy!

All the ingredients come together in one pan and assemble quickly so the majority of preparation will already be done when you show up to your event or pull them out of the fridge for dinner. The key is to par-cook your stuffing mixture before baking, as this ensures all ingredients are cooked through when heated again. As an added bonus, making these ahead allows other flavors to meld together, leaving with you a delicious entree that got even better overnight!
