Weekly Meal Plan 101
What is for dinner at your house this week? I have been meal planning for two years and I will tell you, it is the only reason (well, aside from my crockpot) that I get dinner on the table at night.
Here is what I am feeding my group… it is supposed to get chilly here in North Texas tomorrow. Like down in the 40’s overnight. I am a little excited about this. We had a really hot summer.
Cooler weather means two things for me- soups and casseroles. And the crockpot, but I always use the crockpot.
Oh, real quick. I’ve added a link to my recipes in the navigation bar until my design gal can add it to my topic list. She is over in Haiti right now…. she will have two sweet new additions to her family soon. Â ( The link in my nav bar is Easy Recipes. )
Crockpot Pinto Beans– served over steamed white rice. Simple and filling. I am referring to PW’s recipe here, but will share mine with you really soon…. I have so many projects on my list.
Potato Soup– served with cornbread. I am going to figure out a way to make the soup in the crockpot, but my recipe will need to be adjusted since it is a stove top version. I will share in a tutorial if it turns out well. (This is one of the first recipes I ever shared on my site. Before I took pictures. Kinda funny to look back two years ago!)
Puerto Rican Stew– oh man. This is some good stuff. I am going to try and crockpot this as well, so far I’ve only made it on the stove. You will love the recipe once I share it. It is chicken legs and breasts, cooked over a tomato sauce flavored broth with chunks of dices potatoes and some bay leaves. You serve it over steamed rice with a side of Kidney beans. Ya know, I might break the rules and just add the beans to the stew mixture? Any suggestions from my lovely Puerto Rican readers? (And I bet you my mother is cringing as she reads this and sees I am feeding my kids potatoes and rice all in one meal. She is scolding me for all the starch, I am sure. I bet I get a phone call.)
Pepperoni and Pasta Casserole–Â using a recipe I found on Pinterest. I am going to adapt it a little and make it my own. Served with salad and bread.
Crockpot Apple Butter Pork Chops- carry over from last week.
Leftover Buffet– use ’em up!

Very interesting post. I am a 100% fan of menu planning. I’m in TN and we have much the same weather (maybe not as many tornadoes) as you and we are so relieved to have the cooler weather coming in. I think it keeps your frig and cabinets uncluttered and your meals fresh – and meal planning isn’t that big of a chore. I also find that I actually use most of my left overs too. Thanks so much for sharing. Enjoyed seeing someone with the same point of view!
Hey, I’m stopping by from the Menu Planning Monday blog hop. Sounds like you have been doing menu plans for a long time- 2 years is impressive. I am new to it, but do find it helps me have a plan and spend less at the store buying random things that don’t fit together to make a meal.
Menu planning does make it a whole lot easier to get dinner prepared. I’ll have to try your Puerto Rican stew.
