Weekly Meal Plan 108
I am trying very hard to develop this week’s menu around foods that I already have on hand in my freezer and in my pantry. After all, it is Christmas-present-buying-season and that is less that I have to buy at the grocery store.
Orange Chicken in the Crockpot– this is a $5 dinner and I am really excited for my family to try it. Served over steamed rice.
Southwest Breakfast Casserole– all in one dish. (This recipe was made for a project I am working on with the Texas Beef Council.)
Tortellini Meatball Soup– I am working my way through the 10,000 meatballs in my freezer. Excited to experiment with this recipe. I think my kids will like it.
Catalina Crockpot Chicken super simple and very tasty. Served with a dinner salad and a steamed veggie.
Coconut Rice and Beans– easy and very budget friendly. Served with a dinner salad, baby carrots and ranch dressing. (Probably some fresh fruit too- like apples and oranges.)
Leftover Buffet– use ’em up!

I love my crockpot! I have a board on Pinterest dedicated to my Crokpot L♥ve! 😉 I use it at least once a week! I’m definitely trying the Catalina Crockpot Chicken and the Southwest Breakfast Casserole. sounds so yummy and easy…I like easy!!
The crockpot is my saving grace.
I use it all year long. The majority of my meal plans are based around foods that can be cooked in the crockpot.
