Weekly Meal Plan 12

Here are my dinners for this week.
Sunday Chicken Dinner in the Crockpot– I will say it again, yummy! I popped some bread in the oven and made frozen peas to go with it as well. Hit the spot for a cold night. We appropriately had it on Sunday night.
Homemade Gourmet Beef Stroganoff– this is frozen and pre-assembled in my freezer and is ready to be thrown in the crockpot. I will serve it over wide egg noodles and with yummy Pillsbury frozen dinner rolls.
Asian Crockpot Fried Rice– this is a carry over from last week. With the big boys gone visiting family over Christmas break longer than we expected, I got off easy on cooking a few nights last week. They will be happy I saved this meal for them- they love it!
Chicken and Puerto Rican Rice– I have a whole chicken I will cook all day in the crockpot. (Just cover your chicken in water and season with salt, pepper, garlic and poultry seasoning.) I will de-bone the chicken and serve it over Puerto Rican Rice with some tortilla chips on the side. Any leftover chicken can be stored in the freezer and used later for a casserole dish.

Thanks for stopping by my blog! To answer your question, I haven't tried the balsamic chicken in the slow cooker. I don't use exactly the recipe I linked, but just brown the chicken, add onions, balsamic, and a little water; then cover and let it cook through.
Your plan looks good! I hadn't seen the Asian crockpot fried rice, but that looks like a great way to use leftovers!
I'm glad you liked the Sunday Chicken Dinner. Your other recipes look good too. And I agree, having a meal all ready in the crockpot is a very satisfying feeling.
Tara- cooking a whole chicken in the crockpot and then getting two dinners out of it is a lifesaver! You've gotta try it- soon! And the meat is juicy and tender. Never dry.
