What is for dinner at your house this week? I would love to know your solution to prevent heating up the kitchen during the hot months. I try to cook in the crockpot or on the grill as much as possible.

Here is what we’re eating…

Chicken Pasta Salad– this is so yummy and very easy to make. I love the fresh veggies that are included. This recipe is popular at my house during the summer months. This will make a decent amount that can also be eaten for lunch during the week.

Grilled Hot Dogs– served with chips and fruit.(I bought too many hot dogs for Matthew’s birthday party that we finally had. Can you say spring has been busy? His actual birthday was the end of March.)

Taco Soup– yum and simple.

Taco Soup Tostadas–  drain the leftover taco soup and serve the meat and bean mixture in taco shells or over tostada shells. You could even serve it over chips as nachos. Very versatile.

Crockpot Honey Garlic Chicken– I am going to use boneless, skinless, chicken tenders and serve it over rice. Fresh fruit as a side.

Leftover Buffet– use ’em up! (if there are any)

  1. I am looking for the honey garlic crockpot chicken recipe. The link takes you to the taco soup… would love to try it! I am usually on top of my meal planning but really dont want to be in the kitchen! lol… making a lasagna today… which is probably not the smartest thing to heat up the house but I have the ingredients on hand and can whip it up quickly… I need to come up with some more crockpot items!

      We’ve made the honey garlic chicken a handful of times. My kids really like it.
