Weekly Meal Plan 131
We are consistently in the 90’s here in North Texas. I know that 100 degree days are just around the corner. For that very reason I do not want to heat up my kitchen!
Even though baseball is over, we are so busy. Homeschool is taking up 3-5 hours a day. Some days we are getting it all done at one time and other days we have to spread it out due to attention spans and wiggly little bodies.

Here is our meal plan for the week.
Bean and Rice Burritos– easy and yummy. I will likely make Puerto Rican rice for the inside of the burritos.
Crockpot Ravioli– served with garlic bread and a dinner salad.
Slow Cooker Chicken and Broccoli– served over rice. Easy!
Beans in the Crockpot– served over steamed white rice. Â I will freeze all the leftover beans for future recipes.
French Bread Pizza– fast, easy and mess free!
Leftover Buffet– use ’em up! (if there are any)

This may have been answered in previous posts, but how do you make your Puerto Rican rice? I have never seen you include a recipe for it in all your meal plans, and I’d like to try it! Thanks! 🙂
Hi Kelley, I have never shared it. I need to, it is just a recipe that I make without measurements and that is really what has prevented me from sharing it. It is delicious though. When I make it this week I will work hard to pull together the recipe and post it. 🙂
Basically, the ingredient list is white rice, olive oil, dash of green olive juice, a couple of green olives, Safrito, Sazon, tomato sauce, gandules verdes (green pigeon peas- so good and they are on the Hispanic aisle) water, garlic, salt and pepper. Then you cook it until it looks like this…. one of those things. My children lick their plates clean. 🙂
My mother-in-law and sister-in-law (both Puerto Rican) taught me how to make it and the instructions were literally pour about this much oil, a few spoons of Safrtio, water up to here, etc.

I have not ever had Puerto Rican rice but love anything in a tortilla so I may try your burritos. 🙂 Looks like a good menu, we do as little to heat the kitchen as possible in the summer too.
I am making my own meal plan now for next week.. But this one looks interesting and healthy as well.. Anyway, thanks for the idea here..

Great use of the Crock Pot. Love the “recipe” for the rice. So, if you don’t have any leftovers, what do you do for your leftover buffet? Found you thru Menu Plan Monday.
Lisa- when we do have leftovers sometimes I will try to reinvent another meal. Chicken is easy to use as a filler for a casserole, nachos enchiladas, etc.
Sometimes with leftovers we end up where one child wants leftover casserole and another child wants leftover pasta, and one child wants a sandwich. We just kind of wing it. 🙂
I see as usual you included not too difficult recipes but still they are delicious. Nice.
