We have delicious dinner ideas this week that will keep your kitchen cool in this summer heat. A few crockpot meals, a couple on the stove top and a grilling idea.

Crockpot Catalina Chicken– served with salad, steamed veggies and fresh fruit.
Tex Mex Roast Wraps– easy crockpot dinner. Served with rice and beans.
Grilled Pizza– one of my sister-in-laws gave me some great ideas this weekend for making pizza on the grill. I will share any recipes I make. This is a great way to serve your family pizza without heating up the kitchen.
Cheesy Pasta Chicken– this is a stove top dinner that is ready in 30 minutes or less and is a complete meal all by itself. Serve with a dinner salad or fresh fruit if you want.
Breakfast for Dinner– scrambled eggs, bacon and toast. Yum!
Leftover Buffet– use ’em up!

I’ve tried cooking chicken in the crockpot a million different types a hundred different ways and I can NEVER not get it to be dry. Any tips for that?
Jennifer- the times my chicken has turned out dry seems to be when it is not covered in enough juices or when I cook it for too long.
Have you tried throwing your chicken into the crockpot frozen? This works especially well with chicken breasts. This increases the liquid automatically as it cooks and defrosts in the crock.
Also, ensure that when the meat is done, kick it over to warm instead of leaving it on high or low. Digital crockpots do this automatically when the cook time us up.

Melinda- I find the crockpot a year-round lifesaver. It is perfect in the summer when you do not want to heat up your kitchen and great in the winter for comfort foods like soups and such. It is likely the one kitchen tool I could not live without.
