Weekly Meal Plan 137

Matthew and I have been fighting a head cold all week. I know it is summertime, but I am craving soups and spicier foods that will help clear my sinuses.

Here is what I am feeding my family this week.

Crockpot Chicken Enchilada Soup– I am going to do a variation of a recipe I found on an all crockpot blog. I am using leftover chicken from a previous meal so it will cook even quicker. Served with chips and cheese.

Crockpot Hot and Sour Soup and Crockpot Fried Rice– enough said. Well, wait. I do have one thing to say. This hot and sour soup is restaurant quality and will clear your sinuses like nobody’s business.   I will make the soup in my 4 qt crock and the rice in my 6 qt and we will just have a happy crockpot day.

Easy Chicken Nachos– so simple and perfect for a busy night. Anthony has started football…. yes, football. He begged. He is so good at baseball and football in Texas in BRUTAL. The league he is playing with was referred by family friends- you only practice twice a week instead of 4-5 days a week like most of the local teams. That is just overboard to me.   I am probably going to football hell now….   oh well. Wish us luck.

Crockpot Cafe Rio Chicken– this looks AMAZING! Served in a tortilla with Cafe Rio Lime Rice. My mouth is watering.

Lime Butter Salmon– in foil packets on the grill. Served with a steamed veggie and quiona.

Leftover Buffet– use ’em up!

 

Tell me, are sports practices starting yet in your neck of the woods? How are you managing.
