Weekly Meal Plan 166: My Meal Planning Arsenal

Last week I shared with you guys a peek into what dinnertime looks like at my house and my meal planning arsenal. I also shared a coupon code for online grocery shopping with you guys that you will want to check out.

Last night we had dinner at a local pizza buffet as part of our celebration for Anthony’s 12th birthday! Whew hoo! (His birthday is today.) I did make this cake and take it to the pizza place with us. It was amazing!!! It is another recipe from friend Kim shared with me. Her husband’s mom and Grandmommy have been making this cake for years. It is a Strawberry Refrigerator Cake and I was granted permission to share this recipe with you…. later this week.

I did add chopped pecans to the top. Amazing!

Here is what our meal plan lineup looks like this week.

Pizza Buffet– dinner out for part of Anthony’s birthday celebration at a local pizza buffet.

Creamy Crockpot Black Bean Chicken– this is a new recipe that a friend shared with me. I am making this tonight for Anthony’s official birthday dinner. Served with rice and tortillas. Then we are having brownie sundaes afterwards.

Crockpot Veggie Lasagna– I have leftover spinach I need to use up from last weeks menu. Served with a dinner salad and rolls.

Bean and Cheese Tostadas– using up the leftover tortillas from the creamy black bean recipe above.

Asian Grilled Salmon– served with rice and steamed veggies.

Leftover Buffet– use ’em up!
