Here is what we are having this week:


Breakfast choices:

De Wafelbakkers (spelled funny isn’t it?) Blueberry Pancakes– yum! Have you ever tried these? We love them. No trans fat and no preservatives! They are frozen, but taste homemade and they are very healthy. Sweet already (because of the blueberries I suppose, but you can get them in plain buttermilk flavor as well) so you really do not have to use syrup on them which is always a plus to me! We buy a bag of 24- so they last a few mornings.

Nutella and Toast- Always the default breakfast! (Garrett and Anthony are going to turn into hazelnuts!)

Maple Brown Sugar Instant Oatmeal– perfect for mornings big boys are running late. I can make it in the microwave and they can eat it in the car on the way to school. Warm and perfect for these 27 degree Texas mornings we are having! We will probably eat this for two mornings.(We buy a lot of store brand stuff- Target and Walmart. Unless it proves to be gross, we buy it! Don’t get me wrong, there are specific brands that I like on specific things, but we do buy lots of Great Value and Archer Farms/Market Pantry stuff! Give it a try.)

French Toast Sticks– some are still left from last week. Yummy and you do not have to use syrup since they are already sweet. They heat up quickly in the oven.


Lunches:

Garrett and Anthony pack a lunch and it is the same ol’ same ol’:
Nutella and Peanut Butter sandwiches
BBQ chips
Juice Box
Apple

Lunch for the twins and me:
Peanut Butter and Jelly Sandwiches with Cheetos
Chef Boyardee Dinosaur Bites– fun!
Bean and cheese nachos baked in the oven
Homemade cheese and pepperoni pizza

Mommy will have lots of salads topped with shredded peppered turkey lunch meat. Yum!


Afternoon snack:

Taco dip and tortilla chips – this is yummy and addicting!
cereal, granola bars and/or yogurt
Pizza bites (big kids really love these and they are starving after school)
Carrots and ranch dressing


Dinners:

Crockpot Candy Chicken– Ok, so I’ve carried this meal over for a third week. The kids opted for egg sandwiches one night last week. (Garrett even made them!) Candy Chicken will be made this week for sure! How do I know? Because it is in the crockpot this very minute. My children will be thrilled! Served with steamed rice and buttered broccoli.

Homemade Gourmet Mediterranean Chicken– this is really yum. It is from my HG meal class. It is preassembled and frozen in a ziplock bag in my freezer. Just thaw and cook. Kids love it! Serve with garlic bread and salad.

Homemade Gourmet Enchilada Chicken– I bake it and then add a slice of cheese to the top of the chicken the last 10 minutes of cooking. Serve with Puerto Rican rice and tortilla chips.

Black Bean and Chicken Quesadillas– Using the leftover chicken from the Enchilada Chicken recipe above. Simple- take a can of black beans (undrained), can of corn (drained), can of rotel (drained), a can of slices olives (drained) and mix well. Slice up leftover chicken. In a flour tortilla, fill with bean mixture, sliced chicken and cheese. Fold in half and cook on both side on low heat griddle. Kids love it! So easy! Great way to use leftover chicken as well.

Breaded Cube Steaks– just fry them up. Served with green bean casserole and mac and cheese (from a box). Dinner does not have to be fancy to be good!

Q: Where did I get all of these ‘preassemled Homemade Gourmet meals’ ?

A: Once a month my HG consultant, offers a ‘meal class’. We choose 7-10 meals on her menu that we want to purchase. She provides all the ingredients. We (it is available to anyone) meet at her house and assemble the meals and place them in ziplock bags. Bring it home and freeze. Now you have 7-10 meals ready to go and can supplement your weekly meal planning. If meal planning is new to you, this is a great place to start. It is the only way I got dinner on the table when the twins were babies. Just add a side veggie and a bread and dinner is done!
