Weekly Meal Plan 25

Aside from my personal weekly meal plan, this week I will be working on one for my good friend Tiffany. She is expecting baby #5 in May. She and I both know what she is up against once the baby arrives…. a life of no predictability.

Dinner is always so hard when there is a new baby. Planning it, preparing it and getting it served. So, I am putting together two weeks worth of meal plans for her that will freeze well and her 11 year old daughter can thaw and throw in the crockpot or oven. So I will be busy in my kitchen for the next few days. (Tiffany and I have been friends since we were in the 6th grade and I love her dearly- it is the least I could do for her!)

This is what I am feeding my family this week.

Cinnamon Toast in the oven- melt some butter, sprinkle on a little sugar and cinnamon and bake.

Nutella and toast- the breakfast of running late mornings!

Waffles (frozen, made in the toaster) with peanut butter on top

Cold cereal (Honey Bunches of Oats or Honey Nut Cheerios)

Maple and Brown Sugar Instant Oatmeal

Big boys packed lunches are:

Turkey Hoagies (they love these and it is a nice switch-a-roo)

chips

bottled water (with flavor packet to add)

Yogurt Tubes (I freeze them and they are nice, cold, ice cream-like treats!)

Lunch for those of us at home:

Corny dogs

ABC’s and 123’s

Mac and Cheese

Pepperoni circles and string cheese

Dinner leftovers

We have yogurt, apple sauce and clementine oranges (LOVE THESE) as sides as well.

After school time is a hungry time at our house…

Homemade Gourmet Taco Dip and chips

Baked Tator Tots with melted cheese slices on top

Popcorn on the stove

Chips and salsa

Granola bars and yogurt (we love carbs!)

Tator Tot Casserole– YUMMY! Talk about comfort food! And a great way to work in lots of veggies! (I will be making an extra one as well as one of my friend’s post baby meals.)

Mexican Cornbread Casserole– Another comfort food . I will make Puerto Rican rice to go with it. I need to share this rice recipe with you guys, I’ve received a lot of emails and messages about it. So delish! (Making two of these as well so I can give one to Tiff for post baby. Cook the meat and layer with additional ingredients {except the cornbread} and cover to freeze. Cornbread is to be mixed and added right before cooking. I think her 11 year old can handle that.)

Homemade Pizza– pepperoni and cheese is what the kids LOVE! I buy the packet dough mixes- Martha White, Jiffy or Betty Crocker. So simple!

Beef Fajitas– I’ll cook the fajita meat in the crockpot and I’ll use up the leftover Puerto Rican rice. I’ll make a side salad as well.

Leftover Buffet– use ’em up!
