Weekly Meal Plan 28

Need dinner inspiration? This is what I am feeding my family of seven this week. Below you will find my  dinner plans, as well as breakfast, packed lunches for two school age children, lunch at home for three little children and after school snacks all for an entire week. 

Pizza Garden It’s a local pizza buffet where our entire family easily eats for under $20. The twins’ end of the season soccer party will be there. Yum!

Crockpot Chicken Enchilada Casserole– this is so yummy. I wish I had not waited so long to make it again. You’ll find cream corn, fresh spinach and chicken amongst other ingredients in this casserole. We love it! I will make rice as a side.

Hamburgers– on the grill. Lenny bought a new (and beautiful) grill at the end of last summer. He itches to use it. Only problem is he’s not a planner. So dinner will be going in the crockpot and he has the brilliant idea to grill something…. honey, we must plan these things out. So, it is on the meal plan this week. We add Homemade Gourmets Grandmother’s Sunday Roast seasoning to the hamburger meat. Yum! Served with steak fries on the side (from the freezer section).

Italian Crockpot Chicken– toss a few frozen chicken breasts in the crockpot. Cover in spaghetti sauce. Cook for 4-6 hours. Serve over noddles with a green salad and some french bread. Yum!

Crockpot Chicken with Couscous– Tiffany, over at Eat at Home, has some of the best recipes that are quick, easy with short ingredient lists. She uses a whole fryer for this, but I am going to use frozen chicken breasts because I have a million on hand.

Leftover Buffet– use ’em up!

Big boys packed lunches are:

Turkey Hoagies 
chips
bottled water (with flavor packet to add)
Yogurt Tubes (I freeze them and they are nice, cold, ice cream-like treats!) or apple

Lunch for those of us at home:

Leftovers
Corny dog bites
Tortellinis and Alfredo sauce (you know the easy stuff from the cold section at the store)
Basil, tomato, pesto mozzarella pizza

We have yogurt, apple sauce, string cheese, watermelon and cantaloupe for sides.

Honey Bunches of Oats
Blueberry Waffles with Peanut Butter
Blueberry Pancakes
Pancake and sausage on a stick (yes, we still have tons of these)
Instant Maple and Brown Sugar Oatmeal

After school time is a hungry time at our house…

Homemade Gourmet Taco Dip and chips
Baked Pizza Bites
Fruit and frozen yogurt tubes
Cinnamon Rice Cakes with Nutella
Anything they can find in the fridge that will not eat them first….

    I'm going to check out that chicken with couscous. I have some couscous in my pantry that I need to use.
