Chicken Pot Pie– love this! Great fall meal and comfort food! Served with salad.

Fiesta Enchiladas– excited to try this, but improvising on the white sauce. I am going to use cream of chicken soup and Monterrey jack cheese. I will make Purerto Rican rice and a pot of pinto beans in the crockpot as our sides.

Meatloaf– I am going to cook it in a muffin tin. This expedites the cook time, you’re positive it is done all the way through, and makes individual servings so simple. My kids are not big fans of meatloaf, but if it is more like a big meat ball, they are game. Go figure. Served with potatoes and green beans.

Connie’s Mexican Mess– this looks awesome. I am swapping the Doritos for regular corn chips. We’ll eat leftover Puerto Rican rice from earlier in the week as well.

Leftover Buffet– use ’em up!


Big Boys Lunch:
Ham or turkey sandwich or  summer sausage/cheese/crackers
chips
apple or yogurt
fresh veggies- chopped broccoli, celery, carrots, grape tomatoes
string cheese
bottle of water and flavor packet
(they are starving growing boys… can you tell?)

The twins start Mothers Day Out this week (3 days a week). So for their lunches I will pack:
PB&J sandwich or hard boiled eggs or summer sausage/cheese/crackers

string cheese
chips
cup of yogurt or apple sauce or fruit cup
fresh veggies- chopped broccoli, celery, carrots, grape tomatoes
apple juice box

===>> Buy a veggie tray to make packing fresh veggies in lunch boxes so much easier!

Matthew and I will eat whatever we can find. 🙂

Waffles with peanut butter on top or Nutella (great alternatives to syrup!)
Cold cereal
Bacon and eggs
Biscuit with egg and cheese
Oatmeal

mini corn dogs
summer sausage/cheese/crackers
yogurt and granola bars
fresh veggies and ranch dip
popcorn
