Chili– Yum! It has been in the 40’s and 50’s the last few days here in our neck of the woods and chili is such a comfort winter food for me. (I am down south, so the 40’s are cold to us.) I start with 1-2 lbs of pinto beans and then add 1 lb of cooked beef and lots of seasonings. I like it with shredded cheese on top and a slice of sweet cornbread on the side. How do you like your chili?

Beef Stew– I am so in the mood for warm-me-up-food! I make it in the crockpot. I’ll have to share my recipe soon… I’ve linked to a similar one in the meantime. (I  add more veggies that this one suggests- frozen green beans and corn are my favorites to add on top of what this recipe suggests.)

Connie’s Mexican Mess– this was so good the last time we had it. Easy one skillet meals are what I love if I am not cooking in the crockpot! 🙂

Puerto Rican Stew– I just do not get tired of this. Delicious chicken cooked in a pot with diced potatoes and a tomato-ey stocky broth. Yum! Served with steamed white rice and a side of red beans.

Leftover Buffet– use ’em up!
