Ready for a new week? Before I share my menu with you, here are three quick things I want to remind you of.

I am going to teach you; how to develop a recipe criteria, where to find recipes, the importance of making your grocery list, tools for posting your meal plan, preparing for dinner, and executing the meal plan. I am really excited to share this process with you. I have been meal planning for 60 weeks and it truly is a lifesaver for me.

Now, onto the food. Here is what I will be feeding my family this week.

Western Meal– this is a delicious casserole that will leave us a healthy size of leftovers. I will serve with tortilla chips, sour cream, salsa and a green salad.

Pasta with Tomato Cream Sauce– this is a Pioneer Woman recipe that is so delicious. I will serve with garlic bread and a simple Romain salad dressed with EVOO and red wine vinegar and topped with feta cheese and whole black olives.

Baked Salmon with Hoisin Glaze– served with steamed, buttered veggies (from the freezer) and this super simple toasted almond cous cous.

Chicken Tortilla Soup– I will cook this in the crockpot and serve it with sweet cornbread made in my new 15″ cast iron skillet that I am absolutely in love with!

Leftover Buffet– use ’em up!
