For everyone reading my meal planning series about being a dinner diva in 2011, thank you! We’ve had lots of traffic last week and even through the weekend.

As the week goes on we will continue to talk about the remaining topics in the series which include executing your meal plan, keeping it real,  and what to do when meal planning goes awry. I will also share with you my top 21 recipes. Remember, if you can just make a list of 21 recipes that meet your criteria you are well on your way to eating a home cooked meal with your family each night.

Here is what I am feeding my family this week at Crystal & Co.

Chicken Tortilla Soup– this is a Homemade Gourmet mix, but I tweak it a bit and add cooked chicken, corn tortilla pieces and an entire container of chicken stock. None of this compromises the quality of the soup mix and it extends the meal to easily feed my family of seven. I also serve it with shredded cheese on top and a slice of sweet cornbread.

Crockpot Cheese Ravioli– did you know you can cook ravioli in the crockpot? Pop them in frozen, cover in sauce, and you’re set! It’s been a while since we’ve had this. My kids will be super happy!

Crockpot Rosemary Chicken and Potatoes– served with mixed veggies and dinner rolls.

Chicken Enchilada Bake this is a new to me recipe. It is from the Kraft website. I needed something easy to use up the leftover corn tortillas from the tortillas soup. I might add some frozen corn to this and will substitute canned green chilies for the jalapenos. I will serve it with Puerto Rican rice.

Garlic Lime Tilapia– this is soooo good! If you like fish, you’ve gotta make this. And it cooks up really fast. I will serve it with steamed rice and steamed buttered veggies.

Leftover Buffet– use ’em up!
