Weekly Meal Plan 69- Are You Struggling?

What’s cookin’ in my house this week? Here is our meal plan….

Crockpot Zesty Roasted Chicken– this is a great meal! You roast your whole chicken in the crockpot without any water, just lying on a bed of onions and spices. Served with couscous and a salad.

Black Bean, Corn and Chicken Quesadillas– using leftover zesty chicken. Mix a can on drained and rinsed black beans, some corn and diced chicken. Toast it in a tortilla over a griddle. Yum and easy! Served with Puerto Rican rice.

Personal Pizzas– last week when we made the calzones, it left the little ones begging to make their own pizzas. Another blogger told me about Fleischmann’s Pizza Crust Yeast- easy, fast and the kids love it! (That is what we ended up using for the calzones as well.) Served with fruit and a salad.

Smothered Crockpot Chicken Breasts– I am winging this. A can of cream of chicken, a package of onion soup mix, some milk, salt and pepper and cook in the crock all day… sounds pretty good. I’ll let you know how it turns out (according to the kids of course since I am still on Nutrisystem.) Served with steamed rice and a steamed veggie.

Grilled Hot Dogs– served with baked mac and cheese and fruit.

Leftover Buffet– use ’em up!
