Keeping the house as cool as possible again this week. We might experiment with frying eggs on the sidewalk. I tell ya, it is super hot here in Texas! At 10:00 at night it is still low to mid 90’s here!

We’re also going to take advantage of fresh fruits and veggies (salad) this week.

Crockpot Stuffed Bell Peppers– using the recipe I linked to but improvising a bit. I want to add some feta cheese. Served with fruit and a dinner salad.

Crockpot Chicken Parmesan– looks yum! Served over pasta with salad and bread.

Pesto Chicken and Pasta– using chicken that has been grilled outside. This is a carry over from last week.

Western Meal– this is a yummy casserole. It is a Homemade Gourmet recipe, but you can improvise with store about seasonings.   Served with a dinner salad and fruit.

Asian Grilled Salmon– served with steamed brocolli and rice.

Leftover Buffet– use ’em up!

  1. Have a friend who tried the “fried eggs on the sidewalk” thing last week with her 4 girls. Was it hot enough to fry the eggs? We will never know –her Rottweiller ate the eggs as soon as they hit the ground!!! LOL
