Weekly Meal Plan #9

Yummy… this week is gonna be good!! Yes, I just said ‘gonna’. I also say ‘fixin to’, ‘Y’all’ and ‘aint’ from time to time.

Below are the things I will be serving my family this week for dinner.

Each week I plan for 6 meals, generally Sunday-Friday, as we eat out most of the time on Saturday.

The below are in no particular order… I tried that at first and each week did not always work out in the order I was hoping for. So… what really matters is that we eat the food we are buying, right? If I make too many rules for myself, cooking and meal planning will become a daunting task. We do not want that to happen, do we?

If the name of the food item is bold and generally blue in color, this means you can click on the name of the food as it is a link that will take you right to the recipe if I obtained it online.

If there is no recipe, I try really hard to share it at some point.

I also try to share positive dinner results if it is a new recipe we are trying…. sometimes this takes me a while. But I try.

Week of November 8-14

Racheal Ray’s Penne with Broccoli, Sausage and Chick Peas- Sometimes Rachael Ray’s show is on at our house in the mornings… just depends if little ones are up yet and have taken over morning TV with Sesame Street or Little Einstein’s. Last week Lenny and I caught a bit of her show as we were phase two of our mornings…. big kids dropped off at school and we were bunkering down the house for the terrors that were sure to destroy something that day. Anyway, this looked delish! As Rachel made it, Lenny turned to me and said ‘Can you make that?’ My response… ‘It is on next week’s menu.’ I will let you know how it turns out… making me hungry already! Yum-o!

Rotisserie Chicken served over rice with left over Velveeta Rotel Sauce (from last week) on top. The chicken we picked up at Sam’s in the deli on Saturday. We rarely shop there, it was Lenny’s idea. It is a great place for people who need to purchase in bulk (BIG families like ours) but you need lots of storage space when you get home (NOT us). We have 18 lbs of penne pasta and I have no idea how I will store it, but that is another story for another day.

Kim’s Indiana Chowder– we never got to make this last week as we had so many leftovers that I wanted to utilize. The Santa Fe Chicken lasted forever! I will share this recipe with you once we make it.

Crockpot Brown Sugar Chicken– We bought a few whole chickens at Sam’s. I am going to adapt the recipe for a whole chicken instead of breasts or thighs. I will debone and serve it over steamed rice with the sweet broth over top. Whatever chicken is leftover, I will freeze it to use later in a casserole at a later time. For the record, I made this chicken about 6 weeks or more ago…. the kids have been begging for it again. It is really good and tender.

Chicken Black Bean Quesadillas– this is a great recipe for using up left over chicken (we will use the leftover Sam’s Rotisserie chicken). Super simple, too! Take a can of black beans, drain a can of corn, and also add a can of Rotel tomatoes (juice and all) in a large bowl. Cut up leftover chicken. On a griddle take a flour tortilla and fill it with you bean mixture, some chicken and cheese. Fold the tortilla in half and brown each side. Serve with hot sauce, sour cream and guacamole. It is a hit at our house!

Homemade Pizza– Friday night we have our first monthly Family Game Night at my friend Kim’s house. We are going to make pizzas with the kids and play board games! Everyone is SO excited.


Lunch

Below are Garrett and Anthony’s lunch choices:

Nutella and Peanut Butter Sandwich
Ham or Turkey Sandwiches (we bought a huge package of sliced lunch meat at Sam’s)

BBQ Chips or Pretzel Crisps (these are yum! they make the trip to Sam’s worth it!)

Sliced apples, or banana, or grapes, or yogurt, or a granola bar

Cheese slices- these are good on top of the pretzel crisps!

The twins lunch choices are the same as above, or they can have mac and cheese instead of sandwiches. We bought 12 boxes at Sam’s.


Breakfast

Choices for the week are:

Frosted Mini Wheats
Honey Bunches of Oats
Honey Nut Cheerios
Eggs and Toast
Toaster Strudels (There is one box… when it is gone, it is gone. Generally the box lasts about a day at our house because there are only 6 in the box and there are 6 kids if you count Lenny!)

It is going to be a yummy week!
