Crockpot Pesto Chicken– served with mashed potatoes and mixed veggies. I will share this super simple crockpot recipe on my site soon.
Crockpot Beef Tips and Noodles– yum! Served with a dinner salad and rolls.
Crockpot Pinto Beans– served over steamed rice. Simple, hearty and sticks to your ribs. I will share my crockpot bean recipe with you guys in the coming weeks. I grew up eating beans made in the crockpot- my mother and grandmother perfected it. Leftover beans are great for freezing and using later with other meals.
Chicken and Bean Tostadas– I will mash a couple of cups of the crockpot beans and used them instead of refied beans on the tostadas. This is a quick and easy dinner that is perfect for a school night. Served with fruit.
Homemade Pizza– pepperoni and cheese, of course. The kids love helping make dinner when pizza is on the menu. Served with fruit and a dinner salad.
Leftover Buffet– use ’em up!
