Here are our dinner plans this week- easy recipes.

Black Bean and Corn Quesadillas– super easy recipe. Combine corn, drained black beans, olives, dices tomatoes and taco seasoning. Fill your tortilla and cook on a griddle Yum! Served with sour cream, salsa, guacamole and rice.

Crockpot Spicy Apricot Chicken– excited to try this recipe that was shared on my site by Andrea from Greenbacks Gal. We will go easy on the spice. Served with a dinner salad and mixed veggies.

Crockpot Chicken and Corn Enchiladas– new recipe I will be sharing with you soon. Served with dinner salad.

Taco Salad– all in one dish. What kind of chips do you use and do you include a salad dressing? We use Fritos and Catalina dressing.

Breakfast for Dinner– scrambled eggs, bacon and biscuits.

Leftover Buffet– use ’em up.

    Sounds yummy! Can I come eat at your house this week? 🙂
    We love to top our taco salads individually. I prefer sour cream and green taco sauce, some of the kids like ranch dressing, some like salsa and sour cream. My mom always gets salsa ranch dressing for taco salad. My family loves Doritos, and usually complain if I try to substitute Fritos.
