Weekly Meal Plan: Easy Recipes and Tips for Busy Moms (Week 175)

We have a super busy week ahead.

Summer baseball practice starts for our three littlest boys this week.

We have a dinner mid-week to attend at a restaurant for one of my brothers. He is taking a new career opportunity and we are so proud of him.

Before I go into my meal plan for the week and share the easy recipes I am serving my family, I want to share a quick tip with you guys. This is something I have started doing on-going, because life seems to always be busy.

My boys love hard-boiled eggs. They love them for breakfast, for lunch and for snacks. They will eat them any time of day and they are great protein and my boys find them filling.

I have started boiling a dozen eggs or so at a time and them storing then in the fridge. Throughout the week my kids can grab an egg to go with their breakfast, to eat with their lunch or to have as a snack. Our littlest guy, Matthew (4), is our pickiest eater and he loves hard-boiled eggs.

If you ever have uncooked eggs in your fridge and wonder if they are still good past the expiration date, use the bad egg test to check them out. Nine times out of ten, the eggs are still good past their expiration date.

Here is what I am feeding my family for dinner this week.

Weekly Meal Plan:

Crockpot Chicken and Summer Squash– served over rice with a dinner salad.

Indiana Chowder– super easy! served with dinner rolls.

French Bread Pizza– served with fresh fruit and carrot sticks.

Crockpot BBQ Chicken– served with steamed frozen veggies and apple sauce.

Lime Butter Garlic Salmon– yum! Served with quinoa and a veggie.
