Weekly Meal Plan Ideas: Cold Weather Slow Cooker Dinners (Week 201)

It was cold here early last week. Then, by Friday it was 70 and gorgeous. I am kicking myself for not cleaning my car while the weather was pristine.

By yesterday it was wintery mix weather with threats of frozen roads and we have a cold week ahead. They are predicting Wednesday-Saturday it will be in the 20’s and not get out of the 30’s. This Texas gal has weekly meal plan ideas with lots of comfort food and using the slow cooker as much as possible. Do you blame me?

Here is what our menu looks like.

Weekly Meal Plan Ideas

Slow Cooker Pot Roast– I have fallen in love with this spice I found at Trader Joe’s called Everyday Seasoning. I have been using it on roast and steaks. Phenomenal! Toss in some carrots and potatoes and dinner is done. I will share my full recipe later this week.

Heart Shaped Mini Meatloaves– we are close to Valentine’s Day. Why not? These should cook super fast in this heart tin I have. I will make mashed potatoes and fresh green beans to go with it.

Crockpot Creamy Black Bean and Chicken– just realized I forgot frozen corn at Trader Joe’s today. How did I not have that on my list? (My kids were with me… I will blame them for my forgetfulness.) We serve this in corn tortillas with Puerto Rican Rice on the side. This is a recipe that will be in my upcoming eBook that focuses on 21 Real Easy Recipes for Busy Families.

Vodka Chicken Pasta– amazing! Try it. (There is no Vodka in it.) Served with a salad.

Butter Dill Salmon– this is so easy. Another recipe that will be in my upcoming eBook. I know, I know. I am trying to get it done.  Served with couscous and a steamed veggies.
