I shared yesterday that my sweet friend Kim raises chickens and she brought me a ton of free range eggs last week. I have a fridge full of eggs and I want to make sure none of them go to waste.

Sometimes we forget that breakfast can be dinner. Do you ever do that? My kids love it!! And eggs are less expensive than beef or chicken if we’re comparing costs at the grocery store.

The Best Omelets Ever– these are amazing and customizable. Yum!

Buttermilk Pancakes from Scratch– I think we will have these Valentine’s night for dinner. Thinking I will add chocolate chips to make it fun and festive.

Lime Butter Garlic Salmon– served with Parmesan asparagus and fruit.

Breakfast Tacos (potato and egg)

Crockpot Creamy Black Bean and Chicken– carryover from last week. We serve this in corn tortillas with Puerto Rican Rice on the side. This is a recipe that will be in my upcoming eBook that focuses on 21 Real Easy Recipes for Busy Families.

Leftover Buffet– use ’em up!
