Life is busy here.

Like super busy.

You know the feeling, right?

Last night I arrived home from a 4 day media event here in Dallas with the Dallas Visitors Bureau. From about 7 am until 10 pm each night we were on the go. Visiting tons of amazing places that are family friendly in Downtown Dallas.  Check out the hashtag #dallasBIGfamilyfun over on Instagram and Twitter to see all of the places we visited. They even flew my friend Kelli in from 3 Boys and a Dog and we got to meet for the first time in real life, although it feels like we’ve met a million times. Afterall, we Skype, G+ or talk via phone just about daily.

I feel like it is taking me a while to get things back in order at home. And then homeschool, football practice and life in general is back in full swing.

Naturally, a crockpot meal tonight seemed like the best idea. And easy recipes sound awesome for the entire week.

Weekly Meal Plan

Fire Roasted Pepper and Pesto Spaghetti– this was super delish. I made it tonight. It was so easy to make and I did it in the crockpot. Sharing the recipe this week. Made garlic butter asparagus too! Yum.

Many Clove Garlic Chicken– another awesome crockpot meal. Served with rice and a steamed veggie.

Crockpot Lentil Tacos– so easy, inexpensive and delish! Puerto Rican Rice as a side.

English Muffin Pizzas served wtih fresh fruit and carrot sticks.

Crockpot Catalina Chicken– I have some Catalina dressing mix I bought on sale a while back and I really need to use it. This seems fitting.

Leftover Buffet– use ’em up!
