Ingredients

  • 3 Boneless Skinless Chicken Breasts, cubed
  • 1 Small Onion
  • 2 Cloves Garlic, minced
  • 1 Cup Celery, diced
  • 1 Cup Carrots, diced
  • 2-3 Medium Potatoes, diced
  • 4 Cups chicken Broth
  • 1 Can Cream of Chicken Soup
  • 8 Ounce Package Cream Cheese, softened
  • 1 Cup Frozen Peas
  • 1 Cup Frozen Corn
  • 1 1/2 Teaspoons Salt
  • 1 1/2 Teaspoons Pepper

Instructions

  1. In a large crockpot, add celery, carrots, onion and garlic.
  2. Add cubed chicken on top of vegetables. Then add diced potatoes.
  3. Pour soup over chicken and vegetables. Add the cream cheese and salt and pepper.
  4. Pour in the chicken broth. Break up the block of cream cheese into pieces. 
  5. Cover and cook on high for 4-6 hours or low for 6-8 until chicken is cooked through and vegetables are tender.
  6. One hour before end of cooking, stir in frozen peas and corn. If cream cheese is still lumpy, combine with a whisk until smooth.
  7. Add additional salt and pepper to taste. Serve with your favorite biscuits or bread on the side.

Notes

If you would like the soup thicker, stir together 2 tablespoons cornstarch and 1/2 cup milk until dissolved. Add to crockpot and mix well. Let cook 30 more minutes until thickened.
