ON YOUR GROCERY BILL?
- Boneless Skinless Chicken Breasts – Their lean quality keeps the soup hearty without feeling too greasy or heavy, making it a great choice for a healthy, cozy meal. As the chicken breasts simmer away in the crockpot, they turn super tender, shredding easily into tasty, bite-sized bits that soak up the creamy broth and rich flavors of the soup.
- Small Onion – They bring a subtle sweetness and depth of flavor to the soup that goes so well with the tasty chicken and veggies. As they simmer in a crockpot, the onions soften up and let out their natural sugars, making the soup taste even better without taking over the other ingredients.
- Garlic – Garlic’s special flavor slowly comes out as it simmers in the crockpot, mixing perfectly with the tender chicken, sweet onions, and creamy broth. It all blends together in a delicious harmony of flavors.
- Celery – Celery brings a nice crunch and earthy flavor to the Crockpot Chicken Pot Pie Soup, balancing out the creamy broth and tender chicken. Its fibrous texture holds up well during slow cooking, adding flavor depth and giving you a good dose of vitamins A, K, and C, plus potassium and antioxidants.
- Carrots – Their natural sweetness really pairs well with the savory chicken and broth, and the soft, tender texture of carrots contrasts nicely with the heartier soup ingredients. Carrots are packed with beta-carotene, converted by the body into vitamin A, adding a nutritious twist to the dish that’s great for your vision, immunity, and skin health.
- Medium Potatoes – Potatoes, being starchy, naturally thicken the soup, making it richer without adding extra thickening agents. While they cook slowly, the potatoes break down a bit, soaking up the delicious flavors of the chicken and veggies, adding depth to the soup’s taste overall.
- Chicken Broth – In the slow cooking process of the soup, the chicken broth mixes with the other ingredients, making their flavors pop while adding its own delicious, savory touch. And hey, let’s not forget, the broth also makes sure the soup feels cozy and silky-smooth, like a warm hug in a bowl.
- Cream of Chicken Soup – This soup recipe is a game-changer! It acts as a rich base that effortlessly thickens the broth, giving it a creamy, velvety texture like classic pot pie fillings. The creaminess contrasts beautifully with the tender veggies and chicken, making each spoonful a delicious taste experience.
- Cream Cheese – When you mix cream cheese into the soup, it just melts so beautifully, blending in with the chicken broth and cream of chicken soup to create this rich, velvety texture that’s absolutely irresistible. And let’s not forget that slight tang it brings, perfectly balancing out the savory flavors of the chicken and veggies. It adds this depth and complexity of flavor that you just can’t get with plain cream.
- Frozen Peas – Their bright green color really adds a nice pop to the dish, making it look more inviting. Plus, peas have this sweet, slightly earthy taste that goes so well with the creamy, savory notes of the soup, just making it taste even better overall.
- Frozen Corn – The kernels bring in a pop of sweetness that nicely balances out the savory flavors of the soup, adding to the dish’s complexity without taking over.
- Salt & Pepper – Salt naturally boosts the soup’s flavor, making each ingredient stand out. Pepper adds a touch of heat and bite, balancing the creamy richness with a bit of zing.

Can You Make this Chicken Pot Pie Soup Ahead of Time?
You can absolutely prepare certain components of this delicious soup in advance. For instance, you could cook and shred the chicken a day or two prior. Another option is to create the broth the day before. By keeping all the ingredients separate until you’re ready to cook, you can simply combine everything in the crockpot.
Additionally, should you have any leftovers, they often taste even better the following day as the flavors have had time to meld together. Don’t hesitate! Consider making a large batch to enjoy for several days to come!
