Large Family Meal Planning Week 248

Not sure how the weather is in your neck of the woods but it is boiling here in North Texas. It is only 102 degrees here today but it feels like 110 degrees. Is there really a difference? Step outside and you’re miserable… and my husband has to work in this.

I refuse to heat up the kitchen this time of year. We are only using the grill and the slow cooker. Maybe boil some water for mac and cheese, but that is it!

I have six kiddos (ranging in age from 2 to 17) to feed, plus myself and my husband.  Here is what large family meal planning looks like here.

 

 

Grilled Chicken Thighs– served with grilled asparagus and bell peppers (I just put them on sheet pan and popped them on the grill), side salad and fruit. Super delicious and refreshing!

Grilled BBQ Chicken Legs– served with mac and cheese and fruit.  Using my favorite Stubbs BBQ sauce. Love that is has no HF corn syrup!

Quick Spaghetti– adding a shredded carrot and shredded zucchini to the sauce. Making some extra sauce so I can freeze it for later.  Serving this with garlic bread that I am seriously doing on the grill. Not using my oven this time of year! Also served with a a side salad.

Cocoa Cola Steaks– this is from our June freezer meal plan. I am making these in the slow cooker and then shredding the steak. Serving over brown rice I will make in the pressure cooker and some steamed broccoli.

Chicken Fried Rice– using cauliflower instead of rice. I can’t wait to try this.

Leftover Buffet- use ’em up!
