Nothing screams fall more than cookies with a little kiss in the middle! Oh. My Word. These Pumpkin Thumbprint Cookies satisfy all the meanest fall cookie cravings. Here is my basic thumbprint cookie recipe in case you’re looking for one. 

Plus, making these easy pumpkin cookies is not something to be intimidated by. Easy peasy!  I have no doubt that even one of the most novice of bakers will manage to make these without any mistakes. Perfect for the first-time baker that loves pumpkin spice.

Pumpkin Thumbprint Cookies Recipe

What You Need to Make Pumpkin Spice Cookies

  • 1/2 cup unsalted butter room temp
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 egg room temp
  • 1 tsp.vanilla extract
  • 1 cup canned pumpkin
  • 2 cups all purpose flour
  • 1 tsp. baking soda (not baking powder, there is a difference)
  • 1 teaspoon cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • Hershey’s Kisses

No pumpkin pie spice? That’s ok. Just make some with cinnamon, nutmeg, ginger and cloves.

Optional: If you want to make a fun cream cheese frosting drizzle, you can mix some cream cheese and powdered sugar together in a small bowl with some milk. Drizzle this over your cookies and enjoy!

How to Make Thumbprint Pumpkin Cookies

Preheat your oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking sheet.

In a large bowl cream together the butter, sugar, and brown sugar.

In a small bowl, mix in egg, pumpkin puree and vanilla extract to the butter mixture until smooth.

Whisk together flour, baking soda, pumpkin pie spice, cinnamon and salt in a second bowl.

Add the flour mixture to the wet ingredients in 1/3 increments, until thoroughly combined.

With a small cookie scoop, place balls of cookie dough on the parchment lined cookie sheet.

Pop these in the oven  for 8-10 minutes.

Remove from oven, yes the cookies will be soft. No, that’s not a problem..

Press a Hershey kiss into the top of each cookie.

Now you want to allow the cookies to cool to room temperature on wire racks. This is a super important step!

Can You Double the Recipe for Pumpkin Kiss Cookies?

Yes! This is a super easy recipe to double. Just double each of your ingredients. The important thing is to pay attention to your cookies while they’re baking. If you choose to put multiple pans of cookies into the oven at the same time, there’s a risk that they won’t cook evenly. So, be careful to turn the pans midway through baking them. You might also have to cook them a little longer than the 8-10 minutes if you have multiple batches cooking at the same time. Find your sweet spot for the cooking time and make note of it for the entire batch. 

If you’re doubling the batch I would use a standing mixer to make things easier! 

How Long Do Pumpkin Spice Thumbprint Cookies Last?

They’ll last on the counter for 5-10 days. Which is a long time. You could keep them in a pretty glass dome cake platter and leave them on the counter. I don’t think I would bother putting these in the freezer or the refrigerator, because chocolate doesn’t really handle the cold well. Best bet is to make a new batch.

Now, if you want to freeze the dough raw you can certainly do that if you wrap them well in clear plastic food grade wrap and then foil. Keep the dough in the freezer for up to three months.
