Are the meals that you plan each week for your family focused around the weather? Often times ours are.

When it is cold out we love soups, chili and stews. When it is hot out we avoid the oven. When the weather is nice we seem to grill more.

This week it is in the 70’s for the next handful of days in North Texas. 70’s. It is January. Crazy, I agree. Our sinuses are killing us though. All the back and forth these last few weeks with hot and cold. Ugh.

Here is what I am feeding my family this week.

Crockpot BBQ Chicken– served with a steamed veggie, crockpot garlic mashed potatoes and dinner rolls.

Crockpot Ravioli– served with a dinner salad and french bread.

Lentil Tacos– we love this! It is also a great way to serve tacos on a budget. Lentils are $0.99 a pound. We serve this with rice and beans.

Corny Dogs– with carrots, ranch and applesauce.

Lime Butter Garlic Salmon– served with a salad, steamed rice and rolls.

Leftover Buffet– use ’em up!
