Weekly Meal Plan Ideas: Easy Summer Dinners (Week 211)

We are home from traveling to San Antonio to visit my in-laws.

My boys adore their grandparents and they love being a part of their annual neighborhood 4th of July parade.

We got up early Friday morning and lined up in the parade with the riding lawn mower. That is how we do it in Texas.

The 13 year old drove, and the three younger kids happily rode in the back wearing their red, white and blue, waving their flags and twirling their light up ball things that their grandmother bought them.

The parade starts with one of the local boy scout groups leading.

My husband also grew up in this neighborhood and says they have been doing this for years.

He walked this parade years ago with his oldest boy, who just turned 27 last week.

He sees kids walking who look familiar. Their faces look like their own parents who grew up in this neighborhood with my husband.

We had a great visit.

Lenny’s mom has completed her final round of chemo for breast cancer. She is getting ready to begin radiation. She and I made a trip to get her fitted for her prostheses.

She reminded me 100 times to have a mammogram.  She would remind you too.

We really enjoyed our time, as we always do. My kids never want to leave. Neither does the dog. Neither do the adults.

We drove home in the wee hours of the morning today to avoid as much holiday traffic as possible. My living room is a mess. Life is back to doing. I am really trying to avoid busy… just doing.  Productively.

I am looking forward to a week of home cooked meals. Here is what’s on the menu.

 Weekly Meal Plan Ideas

Lemon Salmon Packets– making packets with foil. Using butter, salt, pepper and lemon to make a delicious simple dinner. Toss the packets on the grill or in the oven.  Frozen salmon works well too. Served with rice and a veggie.

Grilled Mediterranean Chicken–  served over rice with a salad. (pictured above)

Quiona Taco Salad– this time I will use black beans. This is easy, filling and healthy!

Crockpot Chicken Fried Rice– super easy and very delicious. I also love that it does not heat up the kitchen!

Best Grilled Cheese Sandwiches Ever– my kids love these and they are so easy. Served with fruit and chips.

Leftover Buffet– if there are any leftovers.
