What are you cooking at your house this week? Are you on the hunt for real easy recipes that make dinner time more successful?

Stop making it so difficult. As I have said before, your kids just want a home cooked meal on the table. They want to spend time together as a family. They honestly do not want a fancy meal or an Iron Chef presentation. I promise.

One tip that I love to give busy families is to make recipes that allow you to take the leftover and invent them into totally new meals. Like take Taco Soup and turn the filling the next day into tostada toppings or nacho toppings. Cook once and serve it twice!

Here is what I am feeding my family.

Crockpot Taco Soup served with tortilla chips

Taco Soup Tostadas excellent way to use up leftover soup

Crockpot Chicken and Noodlesserved with a steamed veggie and fresh fruit.

Crockpot Black Bean and Chicken Tacos – served with Puerto Rican Rice

Planko Crusted Salmon– so excited to create this. I am going to use a Dijon mustard sauce over the salmon and then cover it in Planko and bake it. Hopefully this turns out so wonderfully and I can add it to my upcoming eBook. Served with a dinner salad and steamed rice.

Leftover Buffet use ’em up.
