Ingredients

Crust

  • 2 Cups All Purpose Flour
  • 2 Stick of Butter, softened
  • 1/2 Cup Powdered Sugar
  • 1/2 Teaspoon Salt

Strawberry Lemon Filling

  • 1 1/2 Cup Strawberries, fresh or frozen
  • 1/3 Cup Lemon Juice
  • 2 Tablespoons Flour
  • 1 Tablespoon Lemon Zest
  • 2 Cups Sugar
  • 4 Eggs
  • Powdered Sugar & Lemon Zest to Garnish, optional

Instructions

    1. Preheat Oven to 350º.
    2. Line a 9x13” glass Baking Dish with Parchment Paper.
    3. In a large bowl, mash butter into the flour, powdered sugar, and salt with two forks. 
    4. Press mixture into your prepared pan to form a crust layer.
    5. Bake crust for 22-24 minutes or until the edges are lightly brown.
    6. While the crust is baking, in a blender, combine 1 cup strawberries, lemon juice, flour, and sugar. 
    7. Add in remaining strawberries and pulse slightly for strawberry chunks.
    8. Transfer mixture to a bowl and slightly beat in eggs and add lemon zest.
    9. Pour strawberry lemon mixture over baked crust (after it cools for 5 minutes).
    10. Bake for 18 minutes.
    11. Remove from the oven, cover with foil, and bake for another 15 minutes.
    12. After the lemon bars are baked, let cool completely on a baking rack.
    13. Dust with powdered sugar and lemon zest, cut, and serve!
