Ingredients Needed for these Brownies
Here’s what you need for this cherry recipe!
Unsalted Sweet Cream Butter – Using unsalted sweet cream butter means you can control the overall flavor better, so you don’t end up with brownies that are too salty and overshadow the sweet and tart balance. Plus, sweet cream butter, made from fresh pasteurized cream, has a slight sweetness that pairs perfectly with cherries and boosts the richness of the chocolate ganache.
Granulated Sugar – Granulated sugar is key to making cherry brownies amazing. It adds the right amount of sweetness to balance out the tart cherries. Plus, when it melts during baking, it creates that perfect glossy, crackly crust on top—just what you want in a brownie. The sugar also helps keep the brownies moist and fudgy, giving each bite a luscious, satisfying texture.
Eggs – Eggs act as a binding agent, helping the ingredients stick together to form a smooth batter that bakes into a nice, stable treat. The proteins in the eggs set during baking, giving the brownies their structure and helping them hold their shape. Plus, eggs add moisture and richness, which is super important for getting that fudgy, gooey center we all love in a good brownie.
Vanilla – Vanilla is a must-have in cherry brownies because it really brings all the flavors together, adding depth and complexity to the taste. Its warm, sweet, and slightly floral notes go perfectly with rich chocolate and tart cherries. Mixing vanilla into the batter amps up the sweetness, making every bite more flavorful.
Cocoa Powder – Cocoa powder is a concentrated source of cocoa solids, so you get a deep chocolate taste without too much sweetness, which pairs perfectly with the tart cherries. Because it’s finely ground, cocoa powder blends seamlessly into the batter for a smooth texture.
All Purpose Flour – All-purpose flour gives the brownies their chewy texture and supports that rich, moist interior we all love. Plus, the starches in the flour soak up moisture and help thicken the batter, making sure the brownies bake evenly with the right consistency.
Fresh Cherries – Cherries add a natural sweetness and a unique tartness that really boosts the flavor. Plus, their juiciness keeps the brownies moist and prevents them from drying out, which is a great contrast to the rich chocolate base. The cherries’ natural acids help balance out the sweetness from other ingredients, creating a perfect blend of flavors that tickles your taste buds.
Chocolate Chips – They give a smooth, rich, and glossy finish that boosts both the flavor and the look. As they melt evenly, you get that perfect texture that spreads over the brownies, creating a luscious chocolate layer. This ganache not only adds an extra burst of chocolatey goodness but also helps to keep the brownies soft and fudgy by locking in moisture. The slightly sweet and creamy chocolate chips balance the tart cherries and complement the deep cocoa flavors of the brownies.
Heavy Whipping Cream – The high fat content is key for getting that creamy, smooth texture a good ganache needs. When you mix it with chocolate chips, the cream makes sure you get a silky consistency that spreads beautifully over brownies, giving them a luxurious finish. Plus, the richness of heavy whipping cream really boosts the flavor, adding a slight sweetness and rich mouthfeel that pairs perfectly with the intense chocolate and tart cherries.

Can I Use Frozen Cherries Instead of Fresh Cherries?
You can totally use frozen cherries instead of fresh ones for these yummy brownies! They’re super convenient, especially when fresh cherries aren’t in season. Just be sure to thaw and drain them well to avoid extra moisture messing up the texture. Frozen cherries are just as flavorful and juicy, so you’ll still get that perfect tartness and sweetness to go with the rich chocolate.
When using frozen cherries, consider spreading them out on a baking sheet to thaw evenly and minimize excess liquid. You can also gently pat them dry with paper towels to ensure they’re well-drained. Additionally, incorporating a bit of cornstarch can help absorb any remaining moisture, ensuring your brownies remain fudgy and not soggy.
Can I Add Nuts or Other Ingredients to the Cherry Brownies?
Adding nuts or other ingredients to your cherry brownies can really take them to the next level. Think about tossing in some walnuts, pecans, or almonds for a nice crunch that goes perfectly with the fudgy texture. You could also mix in some chocolate chunks, dried fruits like cranberries or raisins, or even swirl in some caramel or peanut butter.
Just be careful not to go overboard; too many add-ins can mess with the batter and change the texture of the brownies. Aim for a good balance to keep those rich, chocolaty, and tart cherry notes while adding your own twist.
How Should I Store the Cherry Brownies?
To keep your cherry brownies fresh and tasty, it’s all about proper storage. Once they’ve cooled completely, just pop them in an airtight container at room temperature—they’ll stay good for up to three days. Want to keep them longer? No problem. Store them in an airtight container in the fridge, and they’ll be fresh for up to a week.
For even longer storage, you can freeze them. Just wrap each piece individually in plastic wrap, then put them in a resealable freezer bag or an airtight container. This way, your cherry brownies will last for up to three months. When you’re ready to indulge, let them come to room temperature or give them a quick zap in the microwave to bring back that freshly-baked goodness.

Cherry Brownies with Chocolate Ganache
Satisfy your sweet tooth with these easy-to-make cherry brownies topped with a rich chocolate ganache.
Ingredients
- 1 Cup Unsalted Sweet Cream Butter
- 2 Cups Granulated Sugar
- 4 Eggs, room temperature
- 2 Teaspoons Vanilla
- 2/3 Cup Cocoa Powder
- 1 Cup All Purpose Flour
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Baking Powder
- 1/2 Cup Chocolate Chips
- 1 1/2 Cups Fresh Cherries
- 1 1/2 Cups Semisweet Chocolate Chips
- 3/4 Cup Heavy Whipping Cream
Instructions
- First, preheat your oven to 350 degrees.
- Line a 9×13 pan with parchment paper - it makes cleanup easy.
- Melt butter in the microwave in a small microwave safe bowl.
- In a large mixing bowl, start to add your ingredients one at a time. I like to start with the sugar, then the eggs, vanilla, cocoa, flour, salt and baking powder.
- Use a mixer to mix all of this together until combined.
- Fold in the chocolate chips.
- Remove the stems from your cherries and use a pitter to get the pits out.
- Roughly chop the cherries and add them to the brownie mix. Mix until well combined.
- Pour brownie mix into the baking dish.
- Add a few more cherries on top of the batter if desired.
- Bake in the oven for 30 minutes or until a knife or toothpick comes out clean.
- Allow to cool completely.
- For the ganache, use a double boiler and add the chocolate chips and heavy whipping cream.
- Over medium heat warm up the chocolate chips and cream stirring often to combine well as it melts.
- Pour half of the ganache over the cooled brownies
- Keep the other half warm on the stove until what you just poured over the brownies cools. This will likely take about 20 minutes or so. I have been known to pop it in the fridge to speed it up.
- Once the poured ganache cools, put the other half of the ganache into a large Ziplock bag and cut a tip off the corner of the bag with scissors and drizzle over the brownies. Be as creative as you want.
