Crockpot Pumpkin Butter Chicken Recipe
Fall is here and pumpkins are everywhere! A cold front has blown into North Texas and I could not be happier. What better than to bring the pumpkin to the dinner table!?
You know I love sharing Chicken Recipes with you and this is one I made this past week. It is Crockpot Pumpkin Butter Chicken and I used Trader Joe’s Pumpkin Butter that is out at stores right now!
This was so savory and so delicious!
I served it with buttered brussel sprouts and cinnamon sweet potatoes.
You will be amazed at how simple this is to make and your family will love it!
Ingredients:
- 1 10 oz jar Pumpkin Butter (I used Trader Joe’s) or make it homemade like our Crockpot Pumpkin Butter recipe
- Chicken (I used 4 chicken thighs and 6 chicken legs- this is what I had on hand)
- 1 onion, sliced
- 1 clove garlic, minced
- salt and pepper to taste
This is what the Trader Joe’s Pumpkin Butter looks like. You can get it online, or at a local store. Any other brand you like will do well too I am sure. (Or you could make it homemade.)
Lay your sliced onions in the bottom of an oval 6 qt crockpot.
Spread them out evenly.
Then add the minced garlic.
Place your chicken on top of the onions.
Crack fresh pepper over it and add some salt. Do this according to your taste.
Evenly spread the jar of pumpkin butter over the chicken.
Pop a lid on it and cook for 4-6 hours on high.
I put sweet potatoes in the oven about an hour before the chicken was done.
I also baked some burssel sprouts in a little salt and pepper and a few pats of butter.
If you want you could also serve this with fresh pear slices. I bought some pairs at the market but forgot to slice them up before we ate.
Super easy and delicious.
Instead of sweet potatoes, you could also steam some rice and serve the chicken over the rice with some ladled juices from the crockpot over it.
This chicken is not sweet- very savory.
