Here is a quick healthy dinner idea using potatoes and chicken in a delicious casserole for easy serving.

Ingredients

  • 2 Cups Rotisserie Chicken
  • 1 28 Ounce Package Frozen Potatoes or Fresh Potatoes (1 – 1 1/2 per person)
  • 1 8 Ounce Carton Sour Cream
  • 1 Can of Cream of Chicken Soup
  • 1/2 Cup Milk
  • 2 Cups Shredded Cheese (your fave!)
  • 1/3 Cup Bacon Pieces (I use real but you don’t have to)
  • 1/3 Cup Green Onion Chopped
  • 1/2 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • 2 Tablespoon Melted Butter

Instructions

  1. Preheat your oven to 375 degrees
  2. Grease a 9x13 non-stick baking dish with cooking spray.
  3. In a large bowl mix together the rotisserie chicken, sour cream, frozen potatoes, cream of chicken soup, milk, 1 1/2 cups of shredded cheese, half of the bacon bits, garlic powder, and pepper.
  4. Set remaining ingredients aside.
  5. Pour the mixture into the baking dish and drizzle with the melted butter.
  6. Cover the baking dish with foil and bake for 45 minutes.
  7. Remove from the oven and top with the remaining cheese, bacon bits, and green onions.
  8. Serve and enjoy!
