Do you have traditions at this time of year? Well for us, it’s the time of year when we begin our baking tradition. Christmas is a time for easy recipes, yummy sweets and crazy busyness. Time to get out all of my old tried and true recipes that have been passed down from generation to generation. This is one of the few “healthy” traditions that were passed down to me and I am thankful for that!
These Christmas Gumdrop Cookies are one of those old recipes. I think you will love them… I know your kids will!
Just a word of caution though…these are fattening, sugaring and oh so YUM!
Christmas Gumdrop Cookies
Ingredients:
- 1 Cup Shortening
- 1 Cup White Sugar
- 1 Cup Brown Sugar
- 2 eggs (lightly beaten)
- 2 Cups Flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp.. Vanilla
- 2 Cups Oatmeal
- 1 Cup Shredded Coconut
- 1 Cup Gumdrops
Directions:
Preheat oven to 350 ~ Mix together in bowl white and brown sugars. Beat in the shortening and eggs with a mixer.
Add all of the dry ingredients and mix with spoon, not mixer. Then add gum drops.
Roll into 1 1/2 inch balls and flatten with a fork, or you can just use your hand.
Bake at 350 degrees for 10 – 12 min per batch. Makes 3 dozen cookies.
