Here’s what you need to make this chicken and zucchini dinner!
- Boneless Skinless Chicken Breasts – These are packed with lean protein and soak up flavors really well. Slow cooking makes the chicken super tender, so it’s easy to shred or slice. Plus, without the skin, the dish stays light and healthy, which is perfect for anyone wanting a nutritious meal.
- Onion – When you cook them slowly in the crockpot, onions turn soft and sweet, releasing their natural sugars and adding depth to the sauce. They act as a base ingredient, infusing the chicken and zucchini with amazing aromas.
- Marinara Sauce: Marinara adds rich, robust flavors that take the dish to the next level. Made from tomatoes, garlic, and herbs, it brings a deliciously tangy and slightly sweet kick that pairs perfectly with tender chicken and fresh zucchini. As it all simmers in the slow cooker, the flavors blend together, letting the chicken soak up the essence of the sauce while the zucchini softens and mingles with all those aromatic ingredients.
- Minced Garlic –This gives the dish a rich and aromatic flavor that takes it to the next level. When you slow-cook garlic, it gets milder and sweeter, mixing perfectly with the marinara sauce and other ingredients. Its unique taste boosts the overall flavor, making every bite even more satisfying.
- Italian Seasoning – Italian seasoning brings a burst of flavors that really amp up the dish. This blend usually has herbs like basil, oregano, thyme, and rosemary—classic Italian staples. Toss them into the slow cooker, and they infuse the chicken and zucchini with amazing aromas, taking the meal to the next level.
- Salt – Salt is super important because it really brings out and balances the flavors in a dish. It draws out the natural tastes of the chicken and veggies, making everything taste richer. Plus, it helps with seasoning as you cook, so every bite ends up perfectly seasoned and delicious.
- Pepper – Pepper adds a nice bit of heat and flavor that really boosts the taste. Freshly ground black pepper warms up the dish, balancing the sweetness of the onions and zucchini, and contrasting nicely with the rich marinara sauce.
- Zucchini – Zucchini adds a unique texture and loads of nutritional benefits to the dish. When you cook it slowly, it gets nice and tender, soaking up the flavors of the marinara sauce and seasonings, which really kicks up the taste. Its mild flavor means it blends perfectly with the stronger ingredients without taking over, making it a versatile addition that everyone will love.
- Shredded Parmesan Cheese – The cheese adds a rich, savory depth to the dish. As it melts during slow cooking, it creates this creamy texture that’s just super satisfying with every bite. The sharp, nutty flavor of Parmesan pairs perfectly with the tangy marinara sauce and fresh zucchini, bringing everything together nicely.

Can I Use Frozen Chicken Breasts?
Yes, you can use frozen chicken breasts in your crockpot recipe, but there are a few important things to keep in mind. First, it’s crucial to ensure that the chicken cooks thoroughly. When cooking frozen chicken in a slow cooker, it may take longer for the meal to reach the safe internal temperature of 165°F (75°C). To prevent any issues, make sure to use the high setting for the first hour, then switch to low for the remaining cook time.
Also, consider adding some extra liquid, like broth or additional marinara sauce, to help the chicken cook evenly and remain moist. While using frozen chicken can be a convenient option for busy days, it’s always best to defrost chicken when possible for optimal texture and flavor.
What Should I Serve with Crockpot Chicken and Zucchini?
When it comes to serving Crockpot chicken and zucchini, there are several delicious options to complement the dish. A fluffy side of rice or quinoa can absorb the robust marinara sauce, making every bite satisfying and hearty. Alternatively, you could opt for a fresh garden salad tossed with a light vinaigrette to balance the richness of the chicken and cheese.
For a comforting touch, crusty bread or garlic bread pairs perfectly, allowing you to soak up any leftover sauce. If you’re looking for a low-carb alternative, consider serving it atop a bed of sautéed spinach or cauliflower rice for a nutritious twist that complements the flavors beautifully.

This Crockpot chicken and zucchini recipe is not only convenient to prepare, but it also stores exceptionally well for meal prep. Once cooked, you can portion the leftovers into airtight containers and refrigerate them for up to four days.
