Easy Caramel Apple Bread Pudding

I needed a way to use up some apples and came up with this easy Caramel Apple Bread Pudding. It’s so warm and tasty, one of the best apple dessert recipes ever.

What You Need to Make Caramel Apple Bread Pudding

  • Bread Pudding Ingredients:
    • 14 oz French bread cubes (stale)
    • 1 bag (3/4 lb) gala apples (peel, core, and dice)
    • 4 TBSP butter
    • 2 1/2 TBSP flour
    • 2 tsp apple pie spice
    • 3/4 C brown sugar (packed)
    • 1 C water
  • Egg Mixture Ingredients:
    • 5 eggs (large)
    • 4 TBSP unsalted butter (melted)
    • 2 1/4 C milk (whole)
    • 2 tsp vanilla extract
    • 1/2 C brown sugar (packed)
    • 1 tsp apple pie spice
    • 1 tsp cinnamon

How to Make Caramel Apple Bread Pudding

If your french bread loaf isn’t stale, you can make it stale about 24 hours ahead of time by cutting it into 1/2 inch cubes and spreading it on a large baking sheet. Leave it out on the counter to for about a day and it’ll definitely be stale.

To make the bread pudding, preheat your oven to 350 degrees and prep a casserole dish by spraying lightly with baking spray.

To Make the Home Cooked Apple Pie Filling:

Melt the butter over medium heat in a sauce pan.

Continuously whisk while slowly adding flour to the melted butter.

Slowly add the brown sugar while gently whisking in order to blend it all together.

Add diced apples, apple pie spice and water, stirring until all of the apples are well covered, then cover the sauce pan with a lid or a piece of foil.

Cook over medium heat for about 10 – 15 minutes or until the apples are soft, stirring occasionally.

Remove the pie filling from the heat.

Strain the pie filling through a colander, keep both the apples and the hot juice from the apples–you’ll use both.

Allow the apples and juice to cool on the counter for a few minutes before use.

To Make the Bread Pudding:

Place the stale bread in a casserole or baking dish, spread evenly.

Add the cooked apples–be careful as they can still be a little hot. Be sure to work the apples around (with a spoon to keep from burning your fingers) to get the apples between the bread pieces.

In a large bowl, whisk together the eggs, milk, melted butter, vanilla, brown sugar (1/2 cup), apple pie spice, and cinnamon.

Pour the milk mixture on top of the apples and bread. With the back of a spoon or your hands, press the bread down very lightly to make a semi-even surface.

Bake for 35-40 minutes.

Pull the caramel apple bread pudding out of the oven so test if it’s done. If you touch the center of the bread pudding and it feels dense and firm, then it’s ready. If it feels squishy, it’s not done, put it back in the oven for 10 minutes. No need to check with a knife inserted in the middle–it will always come out messy.

When the apple bread pudding is done, place it on the counter and carefully pour the cooked apple juice over the top.

Serve warm with a dollop of vanilla sauce, whipped cream or vanilla ice cream.

How Long Does Caramel Apple Bread Pudding Last?

So, I wouldn’t recommend storing your caramel apple bread pudding on the counter–too much egg and all that for me to feel comfortable doing that. We put ours in an airtight container and then the fridge. Then, it will last anywhere from 5-10 days and you just scoop out some onto a plate and heat it in the microwave.

Can You Freeze Caramel Apple Bread Pudding?

For sure! You just need to place it in an airtight container. Then, when you’re ready to have a bite, just defrost on the counter for a couple of hours or the fridge overnight and you’re ready!
