Tips to Keep Holiday Bundt Cakes from Sticking in the Pan

  • Use Gran’s old bundt pan or a non-stick pan. Frankly, it’s likely that the pan gran used will work really well–that beat up old aluminum just has something about it. But, if you don’t have access to her old bunt cake pans, grab a nice non-stick pan from the shelf.
  • Grease your pan. Leave the butter in the fridge. Butter makes a sure-stick surface. I don’t know why people recommend it. Use non-stick spray or melted lard or just wipe it down with some vegetable oil. No butter.
  • Grease riiiiight before pouring. Don’t grease the pan, preheat the oven, then work on making the batter. Grease the pan literally right before you’re about to put the batter in it so that the grease doesn’t run down the sides and pool in the bottom.
  • Coat the pan in sugar, not flour. Did you know that flour acts like glue when baked? Yeah, don’t use it. Bad idea. Instead, dust with sugar. It’s going to break the seal between the pan and the batter–and taste amazing on the crust.
  • Release the sides with a knife–including the tube. Use a butter knife to work the sides of the cake free. Don’t just stab down, though, just gently nudge. You’re looking to break the seal, not shred the sides.
  • Let the cake rest. Give it 5 minutes on the counter, just after pulling it from the oven. This 5 minutes will let your cake shrink a little as the temperature drops a bit.
  • Jiggle a little. Pop a plate on top of your bundt pan and then flip it over. You can drop it onto the counter or you can give the side of the pan a little bash with the butter knife you just used to release the sides of the cake from the pan.
  • Pop it back in the oven. If you just can’t get the cake out of the pan, you can try popping the cake back in the cooling oven for 10 minutes. Then repeat the above steps of releasing, resting and jiggling.
