Ingredients

Crust Ingredients:

  • 1 1/4 Cups Graham Cracker Crumbs
  • 1/4 Cup Sugar
  • 1/4 Cup Light Brown Sugar
  • 1/4 Cup Unsalted Sweet Cream Butter, melted

Cheesecake Ingredients:

  • 1 1/2 Cups Pure Pumpkin Pureé
  • 3 Large Eggs
  • 1/2 Cup Light Brown Sugar
  • 1 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Ground Nutmeg
  • 1/2 Teaspoon Ground Ginger
  • 1/4 Teaspoon Kosher Salt
  • 3 (8 Ounce) Bars of Cream Cheese, softened
  • ½ Cup Sugar
  • 1 Teaspoon Pure Vanilla Extract

Instructions

For the crust:

  1. Preheat oven to 350 degrees and line the pan with the cupcake liners.
  2. Using a medium bowl, mix the graham cracker crumbs and both sugars until combined.
  3. Gently mix in the melted butter until a sandlike mixture forms.
  4. Using a tablespoon, scoop 1 tablespoon of the crust into each cupcake liner.
  5. Using a flat bottomed cup, gently press into the crust to make a even and flat layer.
  6. Set aside while you make the cheesecake filling.

for the cheesecake:

  1. Using a large mixing bowl, add the pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, ginger and salt and mix well until combined.
  2. In another bowl, beat together the cream cheese, sugar, and vanilla extract.
  3. Combine the pumpkin mixture into the cream cheese mixture and beat until smooth and combined.
  4. Using the tablespoon again, scoop about 2 ½ tablespoons of the cheesecake batter into the cupcake liners.
  5. Once all is filled, place into the oven and bake for 25-30 minutes or until the edges are firm and the middle slightly jiggles.
  6. Remove from oven and place onto the counter to cool to room temperature.
  7. Once cooled, move tray into the fridge for overnight.
  8. When ready to eat, serve with whipped cream, pecan and a dash of cinnamon!
